	<span style="FONT-SIZE: 14pt"><strong>买的时候让师傅切好，块小一点好熟且易入味。</strong></span></p>

	<span style="FONT-SIZE: 14pt"><strong>1. 先煮一锅水，水开了放切好的块进去，煮一会，等到没有&nbsp; 红色的血丝,水面上会漂一层　泡沫，然后关火，将水倒掉，猪手用温水洗净，主要是泡沫洗掉。</strong></span></p>

	<span style="FONT-SIZE: 14pt"><strong>2. 烧热锅，加油，放入姜块，拍蒜，花椒，红尖椒（我没放），烧出香味，放入猪手翻炒，等到香味进到猪手里面放酱油红烧，把猪手都变成红色，酱香出来后加盐，盐不必太多，因为酱油已经很咸。</strong></span></p>

	<span style="FONT-SIZE: 14pt"><strong>3. 加水，量是以淹没猪手为准。等水烧开，煮一会，再将火调小，至少要烧一小时，不过这个时候，你可以做别的菜，比如炒个蔬菜，或做个汤什么的，等你做好了，猪手也好了，用筷子试试发现皮已经烧得很嫩了，那就上盘。</strong></span></p>

	<span style="FONT-SIZE: 14pt"><strong>4. 上盘是很有讲究的，先将猪手盛出来，汤汁再调，放少许糖，加鸡精，我还放了几片青椒和红椒，其实只是调色，红红绿绿的好看，再把汤汁淋在猪手上，就可以出盘咯！！</strong></span></div>

			翻鱼的时候小心，弄断了就砸锅啦，然后就可以放一小碗水（家庭没有高汤）开始煮——饭店里火大油多，人家甚至全用油烹熟，家庭就用自己的做法咯！ <br />

			水开后加入最重要的料酒＋酱油+醋，是个去腥调味染色的步骤！放入先前的配料一起烧，汤中放入少许盐，要考虑量哦，因为酱油也是咸的，包括鱼本身以及入过味了！不停的把汁浇在鱼上，保证均匀受热！烧一小会，鱼就熟了，时间久了就容易破坏外形！ <br />

			锅里还有一些汤呢！精华所在啊！加入少许糖和醋，鸡精，调好一碗底的水淀粉，下锅，大火烧开，迅速搅拌均匀，有一点粘稠的时候就撒葱起锅！ <br />

			最后工序——浇上汤汁！汁的多少自己把握，少了太干，多了没味！</strong></span></div>
